Tried making pizza again this time with

00 (double zero) flour. I used a recipe that called for roughly 1:1 double zero (00) and all purpose flour.

Wow. What a difference. I could immediately, just from shaping the dough into a pizza that it was going to be good, if not different.

I used the Betty Crocker electric pizza maker this time, not the Ooni pizza oven because it was getting late in the night and I didn’t want to set it up and I didn’t want to fuss with the peel. I look forward to trying the Ooni though on the next one.
